That rack of lamb you ordered at that fancy restaurant that one time may look daunting, but trust me it is not at all! Lamb is incredibly easy to prepare and cook to perfection! And because its relatively less thick than other rack of meats, it’s pretty quick too.
Because Costco sell amazing high quality rack of lamb for a really affordable price (ours was $18 for a full rack), this is definitely a winning fancy dinner/lunch option for everyone.
Traditionally, people use minced garlic, rosemary, salt and pepper, and olive oil. As an Asian household, we never really use rosemary. So this is more of a quick less traditional rack of lamb. And when I say quick, I’m talking it took me less than 10 minutes to throw together. I served this with a quick pesto arugula salad and a side of air fried garlic herb roasted potatoes. Recipe and ingredients for those will also be included here.
Rack of Lamb Ingredients:
– Rack of lamb already Frenched (1.5-2 lbs is what I generally use or 8 ribs)
– Montreal steak seasoning
– Garlic Powder or minced garlic
– Fresh grounded black pepper
– Italian seasoning
– Olive Oil
Steps to prepare Rack of Lamb:
1. Clean your rack of lamb and pat dry
2. Liberally season with your Montreal seasoning, garlic powder, freshly ground pepper, and sprinkle some Italian seasoning
3. Rub and press in spices with a coat of olive oil
4. Let sit in room temp for 30 minutes
5. Fire up your oven to 450 degrees F. Foil the exposed ribs so they don’t burn. Place your rack of lamb fat side up uncovered in the oven for about 10 minutes. Mine ended up taking ~15 minutes to develop a nice crust. Don’t cook at this temperature for longer than 15 minutes though.
6. Reduce temp to 300 and finish rack until internal temp reaches 125 for rare and 135 for medium rare.
7. Let rest before slicing and serving ~10 minutes
**if your rack of lamb has a lot of fat, you can finish a sear by quickly broiling the lamb. I would reduce step 6’s time and check the temperature of your rack of lamb earlier if you do this. You don’t want to eat a well done rack of lamb.
Ingredients for Pesto Arugula Salad
– 3-4 Tbs Ready made pesto sauce
– Sheep/goat Feta (or any Feta)
– Freshly ground pepper
– 2 Tbs Honey
– 5 Tbs Apple Cider Vinegar
– Arugula/rocket
Steps for making Pesto Arugula Salad
1. Combine everything but the arugula and feta into a container and shake until dressing is emulsified
2. Pour dressing over arugula and sprinkle Feta
*optional: a sprinkle of crushed red pepper
Ingredients for Air Fried Garlic Herb Roasted Potatoes
– 1 lb cleaned + dried red or yellow baby potatoes halved (make sure they’re the same size)
– 1-2 tsp Garlic powder
– 1-2 tsp Italian Seasoning
– Salt and Pepper
– 1 tbs Olive oil
Steps for Air Fried Garlic Herb Roasted Potatoes
1. Set your air fryer to 400 degrees
2. Generously sprinkle garlic powder, Italian seasoning, salt and pepper onto your potatoes
3. Rub olive oil all over your potatoes
4. Place in air fryer for ~10 minutes. Remember to shake the basket halfway through. Poke with fork to see if its done.
Easy Peasy lemon squeezy. My husband and I both eat 2 ribs at a time so one rack is good enough for 2 meals. 🙂
