Every time we frequent the Vietnamese delis around Seattle, we see xoi man. Xoi man is that plate of sticky rice topped with yummy delectable savory things such as Chinese sausage, pork sung (dried pork floss), scallion oil, and fried shallots. Every time I see this, I am TEMPTED. I always touch the xoi man and caress over the bright red Chinese sausage internally debating whether or not I’m going to buy it this time.

The thing, when you buy it at the deli, it almost always is cold. I mean sure you can ask them to pop it in the microwave but then they’re microwaving the styrofoam plate with it, and welps I’m not too keen on that particular taste. Cold Chinese sausage with cold sticky rice is a hard no for me..But hey, here’s a QUICK and financially responsible option to creating this yummy dish at home. INSTANT POT IT.

Real quick guys, I mean I literally got out of bed, told hubby to hold Mila and went downstairs and came back upstairs before Mila’s milk warmed up enough for her to drink. This recipe was good enough for 2 adults with big appetites and a little booger with a little booger appetite.

Ingredients:
– Sweet rice also known as ‘sticky rice’ and no, you don’t need to soak this beforehand!
– Water
– Savory toppings like fried shallots/garlic, sliced Chinese sausages, salted egg yolks, dried pork floss, chopped scallions if that’s your thing

Steps:
1. In an IP, place 1 cup of water and your IP trivet in.
2. In a heat safe bowl (stainless steel or glass works), line your bottom with your salted egg yolks, Chinese sausages, a sprinkle of your fried shallots and garlic.
3. Add 1 1/2 cup of sweet sticky rice and 1 cup of water into your bowl. Cover the bowl with foil so that extra water/condensation doesn’t find its way into your sticky rice and make it soggy.
4. High pressure 20 minutes, and let it naturally release for at least 10 minutes. Or if you’re like me, set it and then forget about it for the next hour and a half 🙂  Seriously such a forgiving recipe…
5. Invert onto a plate and top with your pork floss, scallions, and some more fried shallots and garlic.
6. Let people think you’re a hard working kitchen genius when actually you’re just lazy with a healthy appetite. 🙂
