So there’s this trend that’s been happening in the past few years, where ethnic foods that a lot of people called gross and made fun of minorities for eating are being insta-popularized! You can see this at the hosh posh American restaurants menus displaying common Asian stuff with a not so common Asian price. Yeah, I’m talking about you my fish sauce fried wings priced at 3-4 dollar a wing!

Anyways, good on you folks for discovering how amazing other cuisines are. Here’s a recipe so you don’t get jipped the next time you see some ‘Vietnamese Inspired Wings’ on a menu though.

Since there are so many ways to fry a wing, we’ll go over different ways :)..Actually I’ll list them out with names that describe them for what they are instead of making it sound frufru bougie.

Naked & dried wings quickly dipped in fish sauce and deep fried in oil.

Naked wings deep fried and coated with a boiled down sweet fish sauce 

Naked wings fried until about 80% done and then cooked with fish sauce to finish off in a controlled setting with medium heat when the fish sauce is ready to be placed in to prevent splattering and bodily harm, phew that was a long name

Lightly floured pre-marinated in sweet fish sauce wings deep fried and tossed with a boiled down sweet fish sauce

All of the above + tossed with ‘fried garlic and shallots’

haha, yeah lovely names huh! Anyways, this past weekend we embarked on completing the last one listed above, the lightly floured pre-marinated in sweet fish sauce wings deep fried and tossed with a boiled down sweet fish sauce tossed with fried garlic and shallots. Yeah, that one…

Recipe for ..the name of the wings I don’t want to repeat again:

  1. Make some sweet fish sauce. Minced garlic, lime, minced Thai peppers, sugar dissolved in some hot water, fish sauce.
  2. Use this fish sauce and marinate some of your washed and dried wings. I like to just use the liquid portion (not garlic and pepper). It should be enough to just coat the wings, not have the wings sit in the liquid.
  3. After however much time you feel like marinating (I was too excited because chicken wingsss and didn’t give much time)- create your flour mixture of flour, salt, and pepper
  4. Get a nice even coat of flour on each of your wing
  5. In some hot oil, fry these babies. Don’t move them around too much, just let the oil do its job.
  6. In a sauce pan, pour in your remaining fish sauce and let this simmer down. When its at a more syrupy consistency, taste it to make sure it’s at the right saltiness level to mix your wings with. Remove from heat
  7. When you’re done frying your wings, throw in some more minced garlic + shallots and when it starts to brown, remove quickly.
  8. Toss your wings with your sauce and 3/4 of your fried garlic and shallots.
  9. Plate wings and sprinkle remaining fried goodness for that instashot!
  10. Let your sister, husband, MIL tell you how much they love you and then eat that last wing everyone’s staring at because you deserve it homie 🙂
