Quick and easy Mediterranean salads are perfect for days your body just wants something light, hearty, crunchy, and delicious. It’s savory, tangy, crunchy, and keeps well in the fridge for the next day! What more can you ask for. I literally put this together 10 minutes before lunch while dancing around and being silly to entertain my 7m old.

Ingredients:
– Handful of grape tomatoes
– 1 Red and 1 yellow bell pepper (with core removed)
– Crumbled feta cheese
– 1/2 Purple onion (I had shallots so I subbed with 2 shallots)
– 1 can of garbanzo beans
– Minced garlic

Dressing:
– 1/4 cup extra virgin olive oil
– Juice of 1 lemon (I subbed lime)
– Salt and pepper to taste

Steps:

  1. Chop your veggies into bite sized pieces
  2. Drain and wash your garbanzo beans
  3. Put your dressing ingredients into a jar. Shake until emulsified, and add this to your veggies!
